HARVEST & WINEMAKING Sourced from the Rapaura Sowman family vineyard the handpicked fruit is chilled overnight and then hand tipped into a basket press where it is gently squeezed and gravity drained to a small tank, lightly chilled, then roughly racked Old French Barriques (OFB’s). Fermented using wild yeast to enhance palate weight & texture. Slightly warm fermented with highish solids in OFB’s the resultant wine is one that shows all the hallmarks of classy Viognier. The aromatic entry consists of lovely musky/funky mineral lime/lemon freshness with nectarine & honeysuckle aromas leading to an delicate and textural palate. This combination with three months lees aging in the OFB’s provides supple creamy support to an already elegantly structured palate with a wonderful balanced dry finish.
